If you are unable to change the GL Date when entering a transaction, it may be because you have the "GL Auto Cutoff Date" set to "Force to Transdate". If this is set to "Force to Transdate" then the "GL Date" of the transaction will force to the date that the transaction was posted.

You can disable or change the auto cutoff setting by going to File > Setup > Loan Setup > Defaults:
